My name is Jorge Rojo, I’m from Guadalajara, Jalisco, Mexico, and I started selling Jalisco’s traditional “tortas ahogadas” in 2001 in Leon, Guanajuato. For the past 18 years, I have worked on creating the best mix of ingredients and recipes, of this amazing traditional street food of Mexico, and to bring it to the public.
In 2011 I moved to San Antonio, Texas. I took on a program in Culinary Arts to expand my horizon on recipes, formulas, dishes, and putting all of my gastronomic and culinary experience to work, and to adapt the traditional Mexican Street Food to Texas.
In 2015 I started working for San Antonio’s most historic and traditional Tortilla Company, Sanitary Tortilla company. While there, I gained true hands on experience in the art of mixing and combining ingredients with the tortilla product. I was given an opportunity to take on a leading role, to create the dishes I had dreamed of providing to the public, starting with the State of Jalisco, Mexico's traditional street food, the famous Torta Ahogada with pork.
Since taking on the role at Ro-Ho, I have been working hard to position the Ro-Ho brand name, not just for brand recognition, but more importantly to be known as a place where customers can have a unique eating experience and truly taste the flavors of traditional Mexican Street Food. Ro-Ho’s goal is to provide every customer a unique culinary experience, focused on Mexican recipe authenticity, knowing that it was all made from scratch.
